The kitchen is the fundamental place for the correct implementation of the Kosher rules. The food preparation follows the teachings of the Torah, which unites tradition and customs to a scrupulous attention while choosing, combining and plating the food. The Kashrut is a set of dietary laws which indicate which food is appropriate to be consumed and which is the correct way of storing and preparing it.

Pesach: a special moment for the Jewish people

Pesach or Jewish Easter is the festival linked to the commemoration of the Exodus, the departure of the Israelites from Egypt, where they had been enslaved. It normally begins the 15th of the month Nisan, which basically corresponds to April, and lasts 7 days. The first and last days are the most important, in fact working is forbidden, while on the other days many businesses remain open just in the mornings.

During Pesach it is forbidden to own and eat food which is made using yeast: from this derives the tradition of matzà, a type of unleavened bread, eaten without any condiment.

Pesach cleaning? A Kosher Tradition.

Even the house must be cleaned from any leavened products. This period consequently leads to a deep cleaning of every room, paying particular care to the kitchen. A special attention is dedicated to yeasts, with meticulous research that is considered like a playful treasure hunt for all the children who look for bread crumbs deliberately left around the house. 

In the kitchen the tradition becomes strict: the stoves, pans and cutlery used to prepare the food for the Pesach week must be part of a special set, or else the daily one must be made suitable with specific washes or treatments. Everything that cannot be purified must be removed.

Space and organisation become fundamental

It becomes therefore easy to imagine the level of scrupulousness when designing a Kosher kitchen in order to reserve the right spaces for every need.

The areas for storing food and dishes must be suitable to accommodate several pairs of dishes, those dedicated to meat, those for dairy products, cookware and equipment which necessarily doubles. But this does not mean that the kitchen has to lose in beauty, on the contrary!
